We harvest our Lions Mane once its reached a point of maturity where its tendrils are just long enough to provide a nice texture and subtle crab like flavor and texture. 

All of our mushrooms are grown on Oak Saw dust and Soy Hull substrate known as "Masters Mix". This blend contributes to the mild earthy taste you love.
